Dr. Karen Bentley offers a perspective on the links between food justice and environmental sustainability, and outlines how our lifestyles and foodways can help build a better future. She is co-founder and past-chair of Sustainable Mountain Living Communities in Clayton, Georgia.

Locavore Luncheon Potluck. Are you a locavore? You are if you depend on fresh, local foods for your menu. If not, try this for your July offering. Instead of pulling down the tried and true recipe book, visit your local farmers' market or farm stand, and build your recipe around what's in season. That's a locavore!

The Cullowhee Community Garden: A Garden That Gives

Community GardenEarth Day Service. UFF will celebrate Earth Day this year on April 13. The theme of this year's program will be "Gardens That Give." The speaker will be Adam Bigelow. He serves on the boards of the WNC Gardens That Give and the statewide N.C.; Community Gardens Partners. The title of his talk will be "The Cullowhee Community Garden: A Garden That Gives." Adam will provide background on food insecurity in WNC and explain the goals of WNC Gardens That Give using the Cullowhee Community Garden as an example. The Cullowhee Garden, a project supported by the Jackson County Board of Health, requires gardeners to donate half of their produce to local food relief agencies.

Soil is Life

Hand in SoilAdam Bigelow. 2015 is International Year of Soils. Soil is the living skin of the Earth. Yet, as environmentalist Vandanna Shiva has noted, we seem to have declared war against the soil itself. There is a paradox here. How will we define the winners and losers of this conflict? And is there cause for optimism? Lest we forget, the soil is an intimate and essential part of the interdependent web of all life of which we are a part.

The Wildflowers of Southern Appalachia

Have fun learning about the Spring Wildflowers of Southern Appalachia with Adam Bigelow.  We will discuss identifying wildflowers using ID Guides and keys, hear the stories of the plants; their many names, benefits, uses; and their relationship to each other, the forest, and to us. And, there will be many beautiful pictures of wildflowers

Adam Bigelow is the owner/operator of Bigelow's Botanical Excursions, an Eco-toursim business based in Cullowhee, NC. He holds an Associate’s Degree in Horticulture from Haywood Community College and a B.S. in Environmental Science from Western Carolina University. He is a member of the Steering Committee for the Cullowhee Native Plants Conference, a board member of the North Carolina Community Garden Partners, and a member of the Gardens That Give of WNC organization. Adam has guided wildflower walks for the Cullowhee Native Plants Conference, the Highlands Biological Station, the North American Rock Garden Society, the Great Smoky Mountains Association, and many other groups and individuals.  Adam has a passion for community gardening and organic gardening, sustainability and environmental education, and especially for the native wildflowers and plants of the Southern Appalachian Mountains.
